Potatoes, sausage, and a lot more! This Saucy Hungarian Red Potato Goulash is something you will crave regularly! With simple ingredients, this recipe is one to try! Serve it with bread and you have yourself a meal to remember. Enjoy!
Ingredients:
2 tbsp butter
2 onions, quartered and thinly sliced
1 garlic clove, pressed through a garlic press
10 medium-sized red skin potatoes, peeled and sliced into ½-inch thick circles (about 2 ¾ pounds)
1 (14 oz.) smoked sausage, sliced on the bias into thin medallions
1 tbsp chopped flat-leaf parsley
Salt
¾ tsp freshly cracked black pepper
1 ½ c chicken stock
Olive oil
1 ½ tsp paprika
Directions:
Place a large and deep non-stick pan on the stove, and turn the heat to medium-high.
Add 1 tbsp of oil and allow it to become hot. Make sure to move the skillet a bit to evenly coat it with the oil.
Add the sausages into the hot skillet, then cook them for a few minutes until brown. Move onto a clean plate.
Add butter into the same empty pan and allow it to melt.
Add the onion slices into the pan, then cook for 5 to 7 minutes or until a bit caramelized.
Add garlic and sauté for a minute or until aromatic. Add salt, pepper, and paprika to season.
Add the potato slices, then cook both sides for a few minutes until brown.
Add the chicken stock slowly, then scrape the bottom of the pan to get the browned bits. Stir until well blended, then cover the pan with the lid and simmer for 15 minutes over medium-low heat.
Remove the lid, then cook the potato slices for 10 more minutes or until tender.
Put the browned sausage back into the pan together with parsley, then stir again until well combined.
Add a bit of olive oil, salt, and pepper if needed. Make sure to taste first before adding anything.
Serve with bread. Enjoy!
