Ingredients:
3 tablespoons butter
1 c heavy cream
1 medium onion, chopped
2 garlic cloves, minced
6 ounces of baby spinach
1 c Parmesan cheese, grated
1 pound salmon skinless and boneless – one piece or multiple pieces
salt and pepper to taste
8 ounces uncooked pasta I use campanelle
2 tablespoons parsley, chopped
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt, then cook for a few minutes until al dente. Drain and rinse with cold water to stop the cooking process.
Place a pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onion, then sauté for about 4 minutes or until soft.
Add the salmon, then cook for about 5 to 7 minutes or until done. Make sure to break it to turn into flakes.
Add the spinach, then cook until wilted completely. This usually takes about a minute or two.
Add the garlic, Parmesan cheese, heavy cream, pepper, and salt. Stir until well blended. Simmer for a few minutes.
Add the drained pasta and freshly chopped parsley. Toss until well combined. Make sure that the pasta is well coated with the delicious sauce.
Sprinkle grated Parmesan cheese and more parsley on top to garnish.
Serve right away and enjoy!
