Ingredients:
Cooked rice
2 garlic cloves, minced
2 fresh tomatoes, peeled and cut into wedges
1 c thinly sliced onion
2 tbsp cornstarch
1 lb. beef top round steak, cut into ¼-inch x 2-inch strips
1 can (10-½ oz.) beef broth
2 tbsp reduced-sodium soy sauce
2 medium green peppers, cut into strips
1 tbsp paprika
⅓ c cold water
2 tbsp butter
Directions:
Sprinkle paprika over the steak and toss until completely coated.
Place a large skillet on the stove and turn the heat to medium-high. Add butter and allow it to melt.
Add the beef into the hot skillet, then cook all sides for a few minutes until brown. Add garlic and saute for about a minute or until aromatic.
Pour in the broth and scrape the bottom of the skillet to get the browned bits. Stir until well blended.
Cover the skillet with a lid, then simmer the mixture for half an hour.
Add onion and peppers, then stir until just combined. Cover and simmer for additional 5 minutes.
In a mixing bowl, add soy sauce, cornstarch, and water. Stir until well incorporated.
Add slurry into the skillet, then stir until well incorporated. Simmer for a few more minutes until the sauce becomes thick.
Stir in tomatoes.
Serve right away over rice. Enjoy!
Notes:
To tenderize the beef, you need to gently pound them with a meat mallet a few times.
Place any leftovers in an airtight container, then place them in the fridge.
Reheat for a few minutes before serving again.
You can also freeze leftovers.
