This super easy cobbler recipe will surely make your day extra special! Oh, man, you have got to give this one a try, I’m telling you! Serve it warm with a nice juice or coffee, and you have yourself a snack to remember. Enjoy!
Ingredients:
3 tbsp real butter
¾ c all-purpose flour
½ c sugar, (if the fruit is tart increase to ¾ cup)
1 tsp baking powder
pinch of nutmeg
¼ tsp of salt
¾ c buttermilk (I used ¾ c organic milk + 1 teaspoon lemon juice)
2 c only of sliced fresh peaches (or fruit of choice)
1 tbsp of sugar for the top
Directions:
In a mixing bowl, add ½ cup of brown rice flour, ½ cup tapioca flour, ½ cup cornstarch, 1 tbsp protein whey isolate, and ½ cup of potato starch. Whisk until well combined to make the flour mix.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
To Prepare the Peaches:
In a large mixing bowl with ice water, add the washed peaches.
Place a large pot with water on the stove and allow it to boil.
Add about 5 tbsp of baking soda.
Place the peaches into the boiling water and let them swim for about 30 seconds, then remove them right away.
Put the peaches back to the ice water.
When cooled, remove the skins.
To Prepare the Cobbler:
Add butter to an 8-inch pan, then place it inside the oven and allow the butter to melt. Remove from the oven.
In a mixing bowl, add baking powder, flour, ½ cup sugar, nutmeg, and salt. Whisk until well combined.
Add milk and whisk until well blended.
Transfer the batter into the prepared pan and spread it evenly.
Sprinkle 1 tbsp of sugar over the batter.
Place it inside the preheated oven and bake for about an hour.
Remove from the oven and allow it to cool for a few minutes at room temperature.
