Ingredients:
8 oz. can of tomato sauce
4 large garlic cloves – minced
1 chopped small yellow onion
2 (14 oz.) sausage links (I use smoked beef sausage)
3 c white rice
1 chopped bell pepper (I use a mix of red and green bell peppers)
5 c chicken broth
1 tbsp olive oil
¼ tsp cayenne pepper (optional)
½ tsp garlic powder
1 tsp salt
½ tsp pepper
Directions:
Place a large non-stick skillet on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the sausage, then cook for a few minutes until brown.
Add the peppers and onions, then sauté until soft and translucent.
Add the garlic and sauté for about a minute or until aromatic.
Add the seasonings, tomato sauce, rice, and chicken broth. Stir until well blended and allow the mixture to boil.
Turn the heat down to low, then cover the skillet with the lid and cook everything for about 25 minutes. Make sure to stir from time to time.

Notes:
I highly suggest you use a non-stick pan for this recipe for easy cleanup.
I always measure all the ingredients before cooking.
You can slice the veggies very small, so your kids will think it has no veggies!
