Ingredients:
For the Chicken:
1 c Parmesan packed, grated fine
2-3 tbsp Butter
½ tsp Salt
½ tsp Black Pepper
3 pieces of Chicken Breasts
1 egg
1 tsp Italian Seasoning or Oregano
⅓ c All-purpose Flour
1 tbsp Olive Oil
For the Sauce:
½ c White Wine
1 tbsp Butter
Juice of one Lemon
To Garnish:
Lemon Slices
Parsley, fresh
Directions:
To Prepare and Cook the Chicken:
Cut the chicken breast into two lengthwise pieces.
Wrap each chicken slice with cling, then gently pound it with a meat mallet.
Add salt, Italian seasoning, black pepper, and flour to a shallow bowl. Whisk until well incorporated.
In the second bowl, crack the egg and whisk it until smooth.
Add the grated Parmesan cheese into another bowl.
Dredge each chicken with the flour mixture, egg, and Parmesan cheese. Make sure to coat each well and shake off any excess.
Add the coated chicken into a baking dish and arrange them in a single layer. Leave a tiny space between each chicken.
Place a skillet on the stove and turn the heat to medium-high.
Add butter and olive oil, then allow them to become hot.
Add the chicken into the hot skillet, then cook each side for a few minutes until golden brown. Transfer the chicken onto a clean plate.
To Make the Sauce:
In the same empty skillet, add another tbsp of butter and allow it to melt.
Add the white wine, then scrape the bottom of the skillet to get the browned bits.
Add the lemon juice, then stir until well blended. Reduce the heat to low and simmer for a few minutes. Remove from the heat.
Add the chicken back into the skillet, then toss until well coated with the sauce.
Sprinkle freshly chopped parsley on top.
Serve the chicken with lemon slices on the side. Enjoy!
