We all love Mac and Cheese. This has been one of the best comfort foods. This version is simple, incredibly delicious, and creamy! This mac and cheese have layers of two kinds of cheese and a mixture of evaporated milk and seasoning with a touch of paprika.
Ingredients
2 large eggs
4 tbsp (½ stick) unsalted butter, plus more for baking dish
3 c. elbow macaroni
⅓ c. skim milk
2 (12-oz.) cans of evaporated milk
¼ tsp garlic powder
1 (8-oz.) package of Monterey Jack cheese, grated
2 (8-oz.) packages of extra-sharp cheddar cheese, grated
Coarse salt and freshly ground pepper
Paprika, for sprinkling
½ tsp seasoned salt
How to make John Legend’s Macaroni and Cheese
Step 1: Prepare the oven. Preheat it to 375 degrees. Ready a 13 x 9-inch glass baking dish. Generously grease and set aside.
Step 2: In a large pot with salted boiling water, add the macaroni and cook following the package directions until al dente. Drain when done and return the cooked macaroni to the pot. To the macaroni, add the butter and toss until melted and the macaroni is completely coated. Set aside.
Step 3: Place the evaporated milk, skim milk, and eggs in a medium bowl. Mix well until combined. Then, add the seasoned salt along with the garlic powder, 1 tsp salt, and half tsp pepper. Set aside.
Step 4: Mix the cheeses in a different medium bowl and set aside.
Step 5: In the bottom of the prepared baking dish, place ⅓ of the macaroni in an even layer. On top, sprinkle ⅓ of the cheese. Repeat with the rest of the macaroni and cheese. On top, evenly pour the milk and sprinkle with paprika.
Step 6: Place in the preheated oven and bake for about 35 to 45 minutes or until the top is light brown.
Step 7: Remove from the oven when done and allow the mac and cheese to stand for about 10 to 15 minutes.
