This was by far the best Jambalaya recipe I have ever tried! It is so easy, simple, and superbly delicious! A must-try recipe indeed. Enjoy!
Ingredients:
1 lb. boneless, skinless chicken breast, chopped
2 small onions, chopped
3-4 tomatoes, chopped – about 1 lb.
3 tsp spicy Cajun seasoning
1 red bell pepper, chopped
2-3 Serrano peppers chopped
2 tbsp olive oil
1 c white rice I used a long grain – I only used 1 c here, but you can fit 2 if you want the meal to feed more. If you do, add more stock
2 stalks of celery, chopped
6 cloves garlic, chopped
½ lb andouille sausage, chopped – if you want to get meaty, add a whole pound!
2-3 jalapeno peppers, chopped
1 c chicken stock
½ lb. shrimp, peeled and deveined
1 tsp olive oil
8 oz. tomato sauce
1 tsp dried oregano I love Mexican oregano
1 tsp dried basil
Your favorite hot sauce for serving
Salt and pepper to taste
Chopped parsley for garnish
Directions:
Place a large pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the celery, onions, and peppers. Sauté for about 6 minutes or until soft.
Add garlic and sauté for a minute or until aromatic.
Add the andouille sausage and chicken, then cook for about 5 minutes or until brown.
Add the tomatoes, then stir and cook for about 3 minutes or until soft.
Add basil, chicken stock, tomato sauce, salt, pepper, oregano, and Cajun seasoning. Stir until well blended. (You can add hot sauce if you want a spicy version.)
Add the white rice, then stir until just mixed. Allow the mixture to boil.
Turn the heat down to low, then cover the pan. Simmer everything for about 30 minutes or until the rice is soft.
Place another pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Sprinkle Cajun seasoning, salt, and pepper over the shrimp. Toss until well coated.
Add the shrimp into the hot pan, then cook for a few minutes or until done.
Transfer the shrimp into the pan with the Jambalaya, then stir until well mixed.
Sprinkle each serving with freshly chopped parsley to garnish.
