How to make Simple Homemade Sugar Donuts
Step 1: To proof the yeast. In a tall glass, mix 2 tbsp warm water, ½ tsp sugar, and 2 ½ tsp active dry yeast. Let it rise for about 5 to 10 minutes until the size doubles and is foamy.
Step 2: In a mixer, place 3 ¼ cups flour, 1 cup warm milk, 2 oz room temperature butter, 3 yolks, 2 tbsp sugar, ¼ teaspoon salt, and the proofed yeast mixture. Mix on low speed for about 2 minutes using the dough hook attachment until the dough comes together. Increase the speed a little and continue to knead for another 15 to 20 minutes or until the dough is tacky.
Step 3: Shape the dough into a ball. For proofing, butter in a large bowl. In this greased bowl, place the dough ball. To prevent the dough from forming a crust, make sure to grease the dough ball.
Step 4: Using a clean kitchen towel, cover the bowl and let the dough sit to rise for about 1 to 2 hours in a warm draft-free place until the size doubled.
Step 5: Grab a parchment or wax paper and cut out about 5 x 5-inch squares.
Step 6: Punch the dough and place it onto the greased surface. Then, roll the dough to half an inch of thickness. Next, cut out as many rounds using a 3-inch round cookie cutter. On 1 piece of the prepared parchment paper, place 1 dough disk. Repeat with the remaining dough.
Step 7: Using a clean kitchen towel, cover the cut-out doughnuts and let them rise until doubled in size for about 45 minutes to 1 hour.
Step 8: In a heavy pot or cast iron, heat 1 ½ inches of oil to 350 degrees F. Once hot, drop the donuts a couple at a time and fry for about 1 to 2 minutes on each side until golden.
Step 9: To paper towels or a wire rack, transfer the fried donuts and allow them to cool.
Step 10: Roll the donuts in granulated sugar or powdered sugar once they are cool enough to handle.
