Ingredients:
3 chicken breast fillets – chopped into bite-size chunks
2 eggs – lightly beaten
½ teaspoon pepper
10 tablespoons plain (all-purpose) flour
2 teaspoons paprika
½ teaspoon salt
3 tablespoons cornflour (cornstarch)
½ teaspoon garlic salt
5 tablespoons Vegetable oil
Sauce:
2 tablespoons sweet chili sauce – use more or less depending on the brand and how spicy you like it
3 tablespoons ketchup
4 tablespoons soy sauce
1 tablespoon Chinese rice vinegar – white wine vinegar will work too
2 tablespoons honey
2 tablespoons brown sugar
2 cloves garlic – peeled and minced
1 tablespoon sesame oil – optional – you can leave out and just sprinkle with plenty of sesame seeds at the end if you prefer
To Serve:
2 tablespoons sesame seeds
Small bunch of spring onions/scallions – chopped
Boiled rice
Directions:
Place a large frying pan on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
In two separate mixing bowls, add corn flour and egg. Beat the egg.
In another bowl, add garlic salt, flour, pepper, paprika, and salt. Whisk until well combined.
Coat each chicken with corn flour, beaten egg, and flour mixture. Shake off any excess.
Add the coated chicken into the hot skillet, then cook all sides for about 6 minutes or until they turn golden brown.
Transfer the chicken into a mixing bowl lined with paper towels to drain any excess oil.
In the same skillet, add the sauce ingredients and stir until well blended. Simmer over high heat until it reduces its volume to ⅓.
Put the chicken back into the skillet, then toss until well coated with the delicious sauce. Cook for another minute or two. Remove from the heat.
Sprinkle each serving with spring onions and sesame seeds to garnish.
Serve over rice. Enjoy!
