Ingredients:
⅓ c cornstarch
1 tbsp ginger, minced
½ tsp red pepper flakes
½ c canola oil
1 lb. chicken thighs, cut into 1-inch chunks
3 cloves garlic, minced
Sauce:
½ c honey
2 tbsp soy sauce
1 tbsp cornstarch
½ lemon, juiced
zest of one large lemon
½ c water
Garnish:
green onions
lemon zest
sesame seeds
Directions:
Add the chicken thighs and cornstarch inside a resealable bag. Seal the bag and shake it until the chicken thighs are well coated with cornstarch.
In a mixing bowl, add all the ingredients to the sauce. Whisk everything until well blended.
Place a large pan on the stove and turn the heat to medium-high. Add vegetable oil and allow it to become hot.
Add the chicken into the pan, then fry all sides for a few minutes until golden brown. Transfer the chicken onto a clean plate.
Leave 1 tbsp of the oil in the pan and discard the rest.
Add red pepper flakes, garlic, and ginger. Sauté for a few minutes until aromatic.
Put the chicken back into the pan, then toss everything until well combined.
Add the sauce from the bowl over the chicken, then toss again until well coated. Make sure to scrape the bottom of the pan to get the browned bits. Simmer the mixture for about a minute or until the texture of the sauce becomes thick.
Remove the pan from the stove, then sprinkle lemon zest, green onions, and sesame seeds on top to garnish.
Serve with rice. Enjoy!
