Yield: 9-inch Pie
This will be the best pie you will ever have! Give it a try and enjoy!
Ingredients:
½ recipe Cream Cheese Pie Dough, or other good pie crust
16 oz raw sweet potatoes, whole and unpeeled
4 tbsp (½ stick) unsalted butter, melted
¾ c light brown sugar, packed
1 tsp ground cinnamon
½ tsp ground ginger
½ tsp ground nutmeg
¼ tsp Kosher or sea salt
3 large eggs, room temperature
2 tsp pure vanilla extract
½ c full-fat sour cream
Egg Wash:
1 large Egg
1 tsp water
Directions:
Step 1: Scrub the sweet potatoes clean and put them into a 6-quart pot.
Step 2: Pour cold water into the pot to submerge the potatoes.
Step 3: Put the pot on the stove and turn the heat to high. Allow the water to boil, then cook the potatoes for about 45 minutes or until tender.
Step 4: Drain and rinse the potatoes with cold water.
Step 5: Sprinkle flour on a flat surface and roll out the pie dough about 12-inch in diameter. Press together the sides of the potatoes and allow the crust to chill.
Step 6: Position the oven rack on the lowest part of the oven, then preheat to 190 degrees C or 375 degrees F.
Step 7: Place the sweet potatoes onto a cutting board. Peel the and throw away the skins.
Step 8: Slice the potatoes into large cuts.
Step 9: In a mixing bowl with an attached sieve, add the potatoes. Use a spatula to push to potatoes inside of the bowl.
Step 10: Add in melted butter, cinnamon, ginger, light brown sugar, and salt into the bowl with the purée. Whisk until well combined.
Step 11: Add in sour cream, vanilla, and eggs. Whisk until well combined.
Step 12: Place the prepared crust on a sheet pan and pour the filling over the crust.
Step 13: In a small mixing bowl, add the egg wash ingredients and whisk until well mixed.
Step 14: Brush the crust with the egg wash.
Step 15: Wrap the pie with aluminium foil.
Step 16: Place the pie inside the preheated oven on the lowest rack. Bake for 30 minutes.
Step 17: Remove the foil cover and bake for another 15 minutes or until done.
Step 18: Remove from the oven and allow the pie to cool at room temperature.
