Ingredients:
Shrimp
1 c chicken broth
1 can (15 oz) diced fire-roasted tomatoes – undrained
1 lb. wild-caught American shrimp – (16-20 count) peeled, deveined and tail removed
2 tbsp butter
1 stalk celery – finely chopped
1 small onion – finely chopped
4 cloves garlic – minced
3 links Andouille sausage links – (7 oz.) halved lengthwise and sliced
1 small green bell pepper – finely chopped
1 tbsp olive oil
⅓ c heavy cream
Salt and freshly ground black pepper – to taste
2 tbsp all-purpose flour
1 tbsp Cajun seasoning – or to taste
2 tbsp chopped parsley, plus more for garnish
½ tsp cayenne pepper – or to taste
Grits
½ c freshly grated Parmesan cheese
salt
1 tbsp freshly ground black pepper
3 c chicken broth
2 tbsp heavy cream
½ c quick grits
Directions:
For the Shrimp:
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and butter, then allow them to become hot.
Add onion into the hot skillet, then sauté for about 3 to 4 minutes or until translucent.
Add the celery and bell pepper, then sauté for about 8 minutes or until soft.
Add Cajun seasoning, cayenne pepper, garlic, and flour. Stir and cook for a few seconds.
Add the tomatoes, chicken broth, and sausage. Allow the mixture to boil.
Turn the heat down to low, then simmer the mixture for about 10 minutes or until the texture of the sauce becomes thick.
Add shrimp, then stir and cook for about 3 minutes.
Add the heavy cream and stir until well blended.
Serve right away with the grits. Enjoy!

Boil the chicken, then season with salt to taste.
