Ingredients:
1 (16 oz) package linguine pasta
2 tbsp butter
2 tbsp extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes (optional)
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ c dry white wine
1 lemon, juiced
2 tbsp butter
2 tbsp extra-virgin olive oil
¼ c finely chopped fresh parsley leaves
1 tsp extra-virgin olive oil, or to taste
Directions:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until al dente. Drain and rinse with cold water to stop the cooking process.
Place a large skillet on the stove and turn the heat to medium.
Add 2 tbsp of olive oil and 2 tbsp of butter, then allow them to become hot.
Add the garlic, shallots, and red pepper flakes. Saute until soft and aromatic.
Season with salt and pepper the shrimp.
Add the shrimp into the skillet and cook each side for about 2 minutes. Remove from the skillet onto a clean plate.
Add lemon juice and white wine. Stir until well blended, then allow the mixture to boil. Make sure to scrape the bottom to get the brown bits.
Add 2 tbsp of butter and 2 tbsp of olive oil. Stir until well mixed.
Allow the mixture to simmer for a few minutes.
Put the shrimp back to the skillet as well as the cooked linguine. Toss until well combined.
Add the parsley and stir until well mixed.
Add more salt and pepper if needed.
Drizzle olive oil on top.
Serve and enjoy!
