Cheesy, fresh, and simply amazing! These three words best describe my experience with these Shrimp Scampi Roll-Ups! This is a must-try recipe that you will surely enjoy preparing!
Ingredients:
1-pound large shrimp, peeled and deveined, roughly chopped
Juice of 1 lemon
10 cooked lasagna noodles
3 tablespoons butter
½ cup freshly grated Parmesan
3 tablespoons all-purpose flour
2 ½ cup whole milk
1 ¾ cup shredded mozzarella, divided
4 cloves garlic, minced
A pinch of crushed red pepper flakes
2 cups ricotta
kosher salt
½ cup dry white wine
¼ cup freshly chopped parsley, plus more for garnish
Freshly ground black pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a large skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add garlic into the hot skillet, then sauté for a minute or until aromatic.
Add flour, then whisk and cook for a minute to remove the raw taste.
Add red pepper flakes, milk, and parsley. Stir until well blended. Simmer for about 3 minutes or until the texture of the sauce becomes thick.
Add salt, pepper, Parmesan cheese, wine, and ½ cup of mozzarella cheese. Stir until well mixed.
Put the shrimp back into the skillet, then toss until well coated with the delicious sauce.
Add lemon juice, then stir until well blended.
Add the cooked lasagna noodles onto a large baking sheet.
Add a bit of sauce into a casserole dish and spread it evenly to cover the bottom.
Add ricotta cheese over the sauce.
Add scampi mixture over the cheese.
Roll, and add more sauce over the top. Sprinkle the rest of the mozzarella cheese on top.
Place it inside the preheated oven and bake for about 20 minutes or until done.
Broil for 2 more minutes or until golden brown.
Remove from the oven.
Sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!
