Ingredients:
2 lb. peeled and deveined shrimp
3 tablespoons butter
½ package uncooked Fettuccine pasta
½ c grated Parmesan cheese
3 garlic cloves, finely chopped
16 oz. jar roasted bell peppers
¾ c Half & Half
½ tablespoon red pepper flakes (or to taste)
½ tablespoon paprika
chopped parsley to garnish
salt to taste
Directions:
Place a large pot with salted water on the stove and turn the heat to high.
Add the fettuccine and cook until al dente. Drain and rinse with cold water to stop the cooking process.
Empty the jar of roasted peppers into the food processor, then pulse until the texture becomes pureed.
Place a non-stick pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the shrimp, red pepper flakes, and paprika. Sauté for a few minutes until the shrimp turns pink.
Add the garlic and salt, then sauté until aromatic.
Turn the heat down to low, then remove the shrimp from the pan onto a clean plate.
Add the pureed roasted pepper into the same pan and stir until well mixed. Cook for about 10 minutes.
Add the Parmesan cheese and half & half, then stir until well mixed and cook for about a minute.
Remove the pan from the heat, then put the shrimp back to the pan as well as the cooked fettuccine, then toss everything until well combined.
Sprinkle chopped parsley and a generous amount of Parmesan cheese on top.
Serve immediately and enjoy!
