Ingredients:
½ c heavy cream
¼ tsp pepper
A pinch of nutmeg
3 tbsp unsalted butter, divided
2 c chicken broth
8 oz. of fettuccine noodles dry
1 c Parmesan cheese, grated
1 c milk
16 oz. large shrimp, peeled, deveined, and tails removed
2 cloves garlic, minced
Freshly chopped parsley for garnish
Directions:
Place a saucepan on the stove and turn the heat to medium.
Add 2 tbsp of butter and allow it to melt.
Add the shrimp, then cook each side for about a minute or until the color turns pink. Move onto a clean plate, then cover to keep warm.
In the same pan, add the rest of the butter and allow it to melt.
Add the minced garlic and sauté for about 30 seconds or until aromatic.
Add the milk, fettuccine noodles, and chicken broth. Stir until well mixed and allow it to boil.
Turn the heat down to low, then cover the pan and cook the noodles for about 11 minutes or until firm to bite. Make sure to stir from time to time.
Add the nutmeg, heavy cream, pepper, and Parmesan cheese. Stir until well blended.
Add the shrimp, then toss until well combined.
Remove the pan from the stove and let the dish rest for a few minutes at room temperature to incorporate all the flavors.
Sprinkle freshly chopped parsley on top to garnish.
