These delicious quesadillas were such delights! I am so impressed with how they turned out. I’m sure you and your loved ones are going to love them as well. Enjoy!
Ingredients:
1 pound ground beef
8 large flour tortillas (burrito size)
2.25 ounces canned sliced black olives drained and rinsed
15 ounces canned black beans drained and rinsed
½ c your favourite salsa
3 c Colby and Monterey jack cheese fancy shredded
2 green onions sliced thin
1 small yellow onion diced
1 ½ tablespoons olive oil
1 bell pepper seeded and diced
1 ½ teaspoons cumin
1 ½ teaspoons chilli powder
1 teaspoon minced garlic
1 ½ teaspoons smoked paprika
sour cream to top quesadillas (optional)
1 teaspoon kosher salt
1 teaspoon black pepper
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Apply cooking spray on the sheet pans.
Place a large skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onion and bell peppers, then sauté until soft.
Add minced garlic and sauté until aromatic.
Add the ground beef, then cook until crumbly and brown. Discard any excess grease.
Add the paprika, cumin, chilli powder, salsa, black olives, black beans, salt, and pepper. Stir until well mixed.
Arrange overlappingly 6 tortillas on the sides of the sheet pan.
Add one tortilla in the middle of the sheet pan.
Pour the meat mixture on top of the tortillas and spread it evenly.
Sprinkle a generous amount of cheese and green onions over the meat layer.
Top with the rest of the tortilla, then fold them towards the centre.
Put the second sheet pan over the tortillas.
Place it inside the preheated oven and bake for about 20 minutes.
Remove the cover and bake for 5 more minutes.
Remove from the oven and let the quesadillas sit for a few minutes at room temperature.
Serve warm with sour cream. Enjoy!
