This is what I call breakfast for champions! Oh, man, you need this recipe in your life. From the ingredients to the dish itself, everything is just too perfect! Ingredients:
¾ lb bacon strips, finely chopped
1 medium onion, chopped
1 pkg (30 ounces) frozen shredded hash brown potatoes, thawed
8 large Eggs
½ tsp salt
¼ tsp pepper
1 c shredded cheddar cheese
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add bacon and onion. Cook until crispy and translucent.
Leave ¼ cup of the bacon grease in the skillet and discard the rest.
Add the hash browns and cook for about 10 minutes or until they turn golden brown. Flip to cook the other side.
Use a spoon to make eight holes all over the hash browns.
Add 1 cracked egg in each hole, then season with salt and pepper to taste.
Reduce the heat to low, then cover the skillet and cook for another 10 minutes.
Uncover and sprinkle a generous amount of cheese on top.
Allow the cheese to melt completely.
Serve and enjoy!
Notes:
You can make fewer holes over the hash browns for fewer eggs.
You can also use sausage instead of bacon for this recipe.
You can also use butter instead of bacon grease.
