I love Chicken Stroganoff. It is one of my ultimate favorite chicken dishes with pieces of tender chicken in a rich and incredibly comforting sauce. For a complete meal, serve this scrumptious Creamy Chicken Stroganoff over mashed potatoes or rice.
INGREDIENTS
3 tbsp olive oil, divided
1 tbsp butter
2 chicken breasts, cut into 1-inch pieces
½ tsp garlic powder
½ medium onion, chopped
Flour for dredging
7 oz. cremini mushrooms, sliced
1 tbsp Dijon mustard or more, to taste
1 tbsp Worcestershire sauce or more, to taste
3 cloves garlic, minced
½ c. sour cream (full fat)
⅔ c. chicken broth
Salt & pepper to taste
How to make Creamy Chicken Stroganoff
Step 1: Into 1-inch pieces, cut the chicken and sprinkle every piece with garlic powder, salt, and pepper. Then, coat the chicken pieces in flour.
Step 2: Into a deep skillet, heat 2 tbsp of oil over medium-high heat. Add the chicken to the hot oil (in 2 batches to prevent overcrowding the pan) and cook for about 3 minutes per side until the chicken is evenly brown, flipping once. Once the internal temperature of the chicken reaches 165 degrees F, the chicken is done. Cook the 2nd batch of chicken, making sure to slightly turn the heat down. If the pan goes dry, add another tbsp of olive oil. To a plate, transfer the cooked chicken.
Step 3: To the pan, melt the butter. Then, add the mushrooms along with the onions. Saute for about 6 to 8 minutes until the water has been released and cooks off, and the mushrooms are nicely seared.
Step 4: To the pan, add the Dijon mustard, Worcestershire sauce, and garlic. Stir and continue to cook for a minute more.
Step 5: Pour in the broth, scraping any brown bits from the bottom of the pan. Then, return the chicken to the pan and cook for additional 2 minutes, stirring often.
Step 6: Next, add the sour cream. Stir and allow it to heat through for another minute or so. Make sure not to let it bubble too much. As needed, season with extra salt and pepper.
Step 7: Remove from the heat when done, and serve the Creamy Chicken Stroganoff immediately. Enjoy!
