Ingredients:
For Tomatoes:
salt
3 large tomatoes
For Pie Crust:
2 to 4 tbsp of ice water
½ c butter
1 ¼ c flour
¼ tsp salt
For Pie Filling:
1 (6 oz) package of crumbled feta cheese
¾ c mayonnaise
a handful of basil leaves, julienned
2 tsp extra virgin olive oil
1 c shredded mozzarella cheese, divided

pepper
1 medium onion, diced
1 clove of garlic, minced
Directions:
For the Tomatoes:
Slice the tomatoes into thin pieces. Put them into a colander, then sprinkle salt on top. Let the tomato slices drain.
For the Pie Crust:
In the food processor, add salt and flour. Pulse a few times until well mixed.
Slice the butter into small cubes, then add them into the food processor with the flour. Pulse again until well blended.
Add a bit of water, then pulse again until it forms into a dough.
Transfer the dough onto a floured surface, then form it into a ball.
Wrap the dough with plastic, then place it inside the fridge for at least 30 minutes.
For the Filling:
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onions into the hot skillet, then sauté for a few minutes until a bit caramelized.
Add the garlic, then sauté for a minute or until aromatic. Sprinkle salt to taste. Remove from the heat and allow the mixture to cool.
Remove the tomatoes from the colander, then use paper towels to pat them dry.
In a mixing bowl, add ½ cup of mozzarella cheese and mayonnaise. Stir until well blended.
To Assemble the Pie:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Remove the dough from the fridge, then unroll it to ⅛-inch thickness.
Lay the dough into the pie pan, then remove excess dough on the sides.
Add the rest of the mozzarella cheese to the bottom of the pie.
Add onions over the mozzarella cheese.
Add some of the tomatoes on top of the onions. Sprinkle salt and pepper to season.
Add ½ of the feta cheese on top of the tomatoes.
Sprinkle basil over the feta cheese. Repeat the process with the rest of the ingredients until everything is arranged in layers ending with the mayonnaise mixture.
Bake for 25 minutes or until done.
Cool at room temperature for a few minutes.
