Ingredients:
½ c (125ml) vegetable or chicken broth
2 tsp fennel seeds, crushed in a mortar
4 cloves garlic, minced
4 large ripe tomatoes, diced
1 small red onion, sliced
2 tbsp crushed tomato
1 red bell pepper, sliced
½ tsp crushed chili pepper
1 package Italian sausage, 5 or 6 sausages total
Fresh chopped basil, for garnish
1 tsp Italian seasoning
1 pound (450g) penne pasta
Salt and fresh cracked pepper to taste
1 scallion, sliced, for garnish
Directions:
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the sausages, then cook each side for a few minutes until brown. Place the sausages onto a chopping board. Slice them into ½-inch pieces.
Add 1 tbsp of oil into the empty skillet, then add the onions and fennel seeds. Sauté until soft.
Add the Italian seasoning and crushed chili pepper flakes, then stir until well blended.
Add the garlic and ground tomato, then sauté until aromatic.
Add tomato slices and bell pepper, then sauté until soft.
Add the broth, then stir until well blended. Simmer for about a minute. Sprinkle salt and pepper to season.
Add the sausage slices, then stir until well mixed. Cook for another 5 to 10 minutes or until the texture of the sauce becomes thick.
Add the cooked pasta, then toss until well coated with the delicious sauce. Remove from the heat.
Sprinkle Parmesan cheese, basil, and scallions on top to garnish.
