Ingredients:
3 tbsp olive oil, separated
11 ounces sausage, see notes
2 tbsp butter
½ c yellow onion, diced
2 cloves garlic, minced
2 ½ c chicken broth
1 ¼ c white long-grain rice, uncooked
1 small red bell pepper, sliced
1 small green bell pepper, sliced
10.75 oz. cream of chicken soup
½ c sour cream
¾ c milk
1 c cheddar cheese, shredded
1 pinch red pepper flakes, optional
Directions:
Step 1: In a strainer, add the rice, then rinse it with cold water for about a minute to remove the starch.
Step 2: Shred the cheese into small pieces.
Step 3: Place a large pot on the stove and turn the heat to medium.
Step 4: Add 2 tbsp of olive oil and allow it to become hot.
Step 5: Add the sliced sausage and cook each side for a few minutes until brown.
Step 6: Add 2 tbsp of butter and allow it to melt.
Step 7: Add onions and sauté until translucent
Step 8: Add garlic and sauté until aromatic.
Step 9: Add 1 tbsp of olive oil and chicken broth. Stir until well mixed. Make sure to scrape the bottom to get the brown bits.
Step 10: Add the prepared rice and allow the mixture to boil.
Step 11: Turn the heat down to low. Cover the pot and simmer the mixture for about 10 minutes.
Step 12: Add the bell pepper and cook for another 5 minutes.
Step 13: Turn the heat off and allow it to rest for about 10 minutes.
Step 14: Turn the heat to low, then add the sour cream, cheese, cream of chicken soup, and milk. Stir until well mixed.
Step 15: Add the red pepper flakes and sausage. Stir again until well combined.
Step 16: Serve and enjoy!
