Ingredients:
1 garlic clove, pressed through a garlic press
2 onions, quartered and thinly sliced
Olive oil
1 (14 oz) smoked sausage, sliced on the bias into thin medallions
10 medium-size red skin potatoes, peeled and sliced into ½” thick circles (about 2 ¾ pounds)
2 tbsp butter
1 ½ tsp paprika
1 tbsp chopped flat-leaf parsley
1 ½ c chicken stock
Salt
¾ tsp freshly cracked black pepper
Directions:
Place a large pan on the stove and turn the heat to medium-high.
Add 1 tbsp of oil and allow it to become hot.
Add the smoked sausage slices, then cook until brown.
Remove the sausage slices from the pan and transfer them onto a clean plate.
In the empty pan, add butter and allow it to melt.
Add the onions and sauté for a few minutes until they turn golden brown or caramelized.
Add the garlic and sauté until aromatic.
Sprinkle salt, pepper, and paprika to season. Stir until well blended.
Add the potato slices, then stir until well coated by the seasonings.
Add chicken stock and stir until well blended. Scape the bottom of the pan to get the browned bits.
Cover the pan and simmer everything for 15 minutes over medium-low heat or until the potatoes are fork-tender.
Put the sausage slices back into the pan and stir until well combined.
Drizzle olive oil and sprinkle freshly chopped parsley.
