Ingredients:
⅓ c creamy peanut butter
½ c (1 stick) butter softened
1 c mini chocolate chips
1 large Egg
1 ½ c all-purpose flour
¾ tsp baking soda
1 tsp vanilla extract
1 c old-fashioned oats
½ c light brown sugar
1 c Christmas mix peanut butter M&M’s
½ c granulated sugar
1 large Egg yolk
3 tbsp Christmas sprinkles
¼ tsp salt
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray or line with parchment paper a 9×13-inch baking pan.
In a small mixing bowl, add oats, flour, salt, and baking soda. Whisk until well blended.
In a large mixing bowl, add butter, sugar, peanut butter, and brown sugar. Beat until well blended and smooth.
Add in the egg, vanilla, and egg yolk. Whisk until well blended.
Transfer the dry ingredients into the bowl with the wet ingredients, then beat until well blended.
Add the peanut butter, chocolate chips, and M&Ms. Stir until well blended.
Transfer the batter into the prepared pan, then spread it evenly. Make sure to press it to the bottom of the pan.
Scatter the sprinkles on top and gently press them.
Set aside the rest of the M&Ms and chocolate chips for later use.
Place the pan inside the preheated oven and bake the batter for 16 minutes or until done.
Remove from the oven and allow the bars to cool completely at room temperature.
Break into small squares.
