Ingredients:
8 corn tortillas (6 inches)
1-½ c salsa Verde, divided
2 c shredded rotisserie chicken
2 c chopped tomatoes
1 c sour cream
¼ c minced fresh cilantro
2 c shredded Monterey Jack cheese
Optional toppings: Avocado slices, thinly sliced green onions, or fresh cilantro leaves
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Add the chicken, ¾ cup salsa, and sour cream into a mixing bowl. Stir until well mixed.
Apply cooking spray in an 8-inch square baking dish.
Add about ¼ cup of salsa into the prepared baking dish and spread it evenly.
Arrange ½ of the tortillas and chicken mixture into the prepared baking.
Top the chicken mixture with minced cilantro, ½ of the cheese, and ½ of the tomatoes. Repeat the process with the rest of the ingredients until everything is arranged in layers.
Place it inside the preheated oven and bake for about 20 to 25 minutes or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm with the rest of the salsa. Enjoy!
Notes:
Garnish with your preferred toppings.
Feel free to add jalapenos if you want a spicy version.
You can use flour tortillas for this recipe as well.
