This incredible dish was given to me by my dear sister. I am so glad that I gave it a try because I never would have tasted perfection! Try it now!
Ingredients:
1 pound pasta such as tagliatelle, fettuccine, or linguine
1 shallot
1 clove garlic
1 tablespoon butter
200g/7ounces salmon fillet, skin removed
125ml/1/2 c dry white wine
250ml/1 c double/heavy cream
80g/2cups mixed greens such as spinach, arugula, watercress
½ lemon, zest, and 1 tablespoon juice
¼ teaspoon salt or to taste
1 tablespoon fresh parsley, chopped
Directions:
Step 1: Place a large pot with salted water on the stove and turn the heat to high, then allow it to boil.
Step 2: Add the pasta noodles and cook for about 8 minutes or until al dente.
Step 3: Remove the skin of the salmon fillet and discard any bones. Slice into small cuts.
Step 4: Season the salmon cuts with salt and pepper.
Step 5: Place a pan on the stove and turn the heat to medium. Add butter and allow it to melt.
Step 6: Add the seasoned salmon cuts and sear both sides for 3 minutes, then transfer them onto a clean plate.
Step 7: Add 1 tablespoon of olive oil into the same pan and allow it to become hot.
Step 8: Add the minced garlic and chopped shallots. Cook for 2 minutes or until aromatic and translucent.
Step 9: Add the white wine and simmer for 5 minutes or until it reduces its volume.
Step 10: Add the heavy cream, mixed greens, lemon juice, lemon zest, and salt.
Step 11: Add the cooked pasta and toss until well coated with the sauce.
Step 12: Put the seared salmon over the pasta as well as the chopped parsley.
Step 13: Serve and enjoy!
