Ingredients:
For the topping:
⅓ stick butter, melted
1 c chopped nuts (pecans preferred)
⅓ c flour
1 c brown sugar
Sweet Potato Mixture:
½ c (1 stick) butter, melted
2 Eggs, well beaten
1 c sugar (can use less if you don’t want it as sweet)
1 tsp vanilla
3 c mashed sweet potatoes
½ tsp salt
Directions:
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
In a mixing bowl, add butter, brown sugar, nuts, and flour. Whisk everything until well incorporated.
Apply cooking spray to a medium casserole dish.
In a large bowl, add eggs, butter, sweet potatoes, vanilla, sugar, and salt. Beat everything until well combined.
Transfer the mixture to the prepared baking dish and spread it evenly.
Place it in the preheated oven and bake for about half an hour or until done.
Sprinkle the crust mixture on top of the sweet potato mixture. Put it back in the oven and bake for 10 more minutes.
Remove from the oven and let it rest for half an hour at room temperature.

This can serve up to 10 people. Make sure to double the recipe if you are serving more than that!
