Ingredients:
1 tbsp oil
1 ½ lb bone-in and skin-on chicken thighs (4-6 thighs)
salt and pepper to taste
1 onion, diced
20 cloves garlic, peeled
2 tsp fresh thyme, chopped (or 1 tsp dry thyme)
2 tbsp flour
1 c chicken broth
½ c Asiago cheese (or Parmesan), grated
salt and pepper to taste
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Season the chicken with salt and pepper.
Put the chicken thighs into the hot skillet and sear each side for about 5 minutes or until they turn brown. Remove from the skillet onto a clean plate.
In the same skillet, add garlic and onion. Saute until aromatic and translucent.
Add flour and thyme. Stir and cook for about a minute.
Add broth and scrape the bottom of the skillet to get the brown bits.
Add the Asiago, salt, and pepper. Stir until well blended.
Put the chicken thighs back to the skillet, then cover it with a lid.
Put it inside the preheated oven and roast for about 15 minutes.
Remove from the oven and place the skillet on the stove. Turn the heat to medium-low and simmer the chicken for about 15 minutes.
Serve hot and enjoy!
