This recipe of the chicken roast is extraordinary! I have never tried anything like this before. I mean, I never thought that apples would give an amazing flavour to any dish, but I was wrong. I love all the flavours in this dish. Give it a try and feel free to add more ingredients if you wish. Enjoy!
Ingredients:
cooking spray
2 tablespoons butter
1 large onion, sliced
salt, plus more to taste
4 teaspoons white sugar
5 medium apples – peeled, cored, and cut into ¼-inch slices
1-pound Yukon Gold potatoes, cut into ¼-inch slices
2 tablespoons olive oil
6 bone-in, skin-on chicken thighs
2 tablespoons chopped fresh rosemary
ground black pepper
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray on the bottom of the broiler pan.
Step 3: Place a skillet on the stove and turn the heat to medium.
Step 4: Add the butter and allow it to melt. Add the chopped onions and sauté’ for 2 minutes or until translucent. Season with 1 teaspoon of salt, and sugar. Stir for another 6 minutes.
Step 5: Remove the skillet from the heat.
Step 6: Place the sauteed onions, apples, and potatoes on the greased broiler pan.
Step 7: Drizzle the chicken with olive oil. Sprinkle with rosemary, salt, and pepper to taste. Rub the chicken thighs until all the spices are all over each chicken.
Step 8: Place inside the preheated oven and roast for 1 hour or until a thermometer inserted in of the chicken thighs reads 74 degrees C.
Step 9: Remove from the oven and let it sit on a wire rack.
Step 10: Arrange the chicken, apples, onion, and potatoes on a serving plate.
Step 11: Serve and enjoy!
