These Roasted Garlic Mushrooms are so good that this was probably my 10th time cooking them for the past two weeks! I got this recipe a few months ago from a friend of mine. Now, allow me to share it with you as well. How awesome is that? As perfect as this recipe already is, feel free to tweak it to your preference. Ingredients:
3 clove garlic, chopped very fine
1 ½ tbsp lemon juice
1 ½ stick unsalted butter, softened
16 even-sized open cap mushrooms stem cut level
½ c bread crumbs
2 tbsp fresh thyme, chopped
salt and pepper, to taste
3 tbsp vegetable oil or corn oil
Directions:
Ready the oven and preheat to 200 degrees C or 400 degrees F.
Slice and remove the mushroom stems.
Put a skillet on the stove and turn the heat to medium-high.
Add in oil and let it sizzle.
Add the mushrooms and saute for about a minute.
Transfer the mushrooms into a roasting pan, then arrange them in a single layer.
Add butter, garlic, thyme, seasoning, and lemon juice into a mixing bowl. Stir until well blended.
Top each mushroom with the garlic-butter mixture.
Press the bread crumbs gently on top of each mushroom.
Place the pan inside the preheated oven and bake the mushrooms for about 10 minutes or until done.
Remove from the oven and allow them to rest at room temperature for a few minutes.
Serve warm and enjoy!
