Ingredients:
3 to 4 pounds bone-in chicken parts
2 oranges, sliced
1 lemon, sliced
1 onion, diced
1 c fresh orange juice
½ c fresh lemon juice
¼ c olive oil
4 cloves garlic, minced
½ tablespoon dried oregano
½ teaspoon paprika
¼ teaspoon red pepper flakes (optional)
2 to 3 fresh thyme sprigs
2 to 3 fresh rosemary sprigs
Sea salt and freshly ground black pepper
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Add garlic, orange juice, lemon juice, dried oregano, sliced onion, red pepper flakes, paprika, olive oil, salt, and pepper into a mixing bowl. Stir until well combined.
Arrange ½ of the lemon slices and ½ of orange slices on the bottom of a baking dish.
Place the chicken pieces over the fruits. Sprinkle salt and pepper on top to taste.
Place the rest of the lemon and orange slices on top as well as rosemary and thyme.
Drizzle the lemon-orange juice on top of the chicken.
Put it inside the preheated oven and bake for about an hour.
Remove from the oven and allow it to cool for a few minutes at room temperature.
