Ingredients:
1.5 tablespoon Olive Oil
1 teaspoon Garlic, minced
1.6 pounds / 750g Baby Potatoes
1 teaspoon Fresh Thyme, finely diced
Fresh Parsley, to serve
1 teaspoon Fresh Rosemary, finely diced
½ teaspoon salt, or to taste
¼ teaspoon Black Pepper
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a tray inside the oven.
Cut the potatoes into two, then add them into a mixing bowl.
Add rosemary, garlic, thyme, salt, pepper, and rosemary. Toss until the potatoes are well coated.
Remove the tray from the oven, then scatter the potato slice on it.
Place the potatoes inside the preheated oven and bake for about 20 minutes or until fork-tender and golden brown.
Remove from the oven and let the potatoes rest for a few minutes at room temperature.
Garnish with freshly chopped parsley.
Serve warm and enjoy!
