Ingredients:
4 tbsp olive oil
1 chicken 3-4 lbs.
chicken seasoning or chicken rub below
3-4 c chopped vegetables (carrots, potatoes, onions, parsnips)
½ tsp Italian seasoning or 1 tbsp fresh chopped herbs
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Chop the washed vegetables, then put them into a large bowl.
Add 1 tbsp fresh herbs, 2 tbsp of olive oil, ½ tsp Italian seasoning, pepper, and salt. Toss everything until the veggies are well coated.
Empty the bowl into a 9×13-inch casserole dish and spread it evenly.
Drizzle olive oil over the chicken until well coated.
Sprinkle the seasoning all over the chicken, then rub each again until well coated as well.
Lay the chicken over the veggies and arrange them in a single layer.
Place the baking dish inside the preheated oven and roast the chicken for about 12 minutes.
Reduce the heat to about 175 degrees C or 350 degrees F.
Cook the chicken for another 1 hour and 20 minutes. Make sure to check from time to time.
Remove the chicken from the oven and allow them to sit for a few minutes at room temperature.
Slice the chicken into small pieces.
Serve with the veggies. Enjoy!
