Ingredients:
1 chicken 3-4 lbs
3-4 c chopped vegetables
4 tbsp olive oil
½ tsp Italian seasoning or 1 tbsp fresh chopped herbs
chicken seasoning or chicken rub below
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Chope the washed veggies, then place them into a large mixing bowl.
Drizzle 2 tbsp of olive oil, ½ tsp Italian seasoning, 1 tbsp fresh herbs, salt, and pepper. Toss until well coated.
Transfer everything into a 9×13-inch casserole dish.
Rub the chicken with the rest of the olive oil.
Rub the seasoning all over the chicken.
Put the chicken over the veggies.
Place it inside the preheated oven and roast for about 12 minutes.
Reduce the heat to about 175 degrees C or 350 degrees F.
Cook for another 1 hour and 20 minutes.
Remove from the oven and let the chicken sit at room temperature for about 15 minutes.
Slice the chicken into small pieces.
Serve with the veggies and enjoy!
