This Ritz Cracker Pie is my all-time favourite dessert! I got this recipe from my aunt. She was so gracious enough to share it with me. Now, allow me to share it with you as well. Ingredients:
150 grams butter
3 large Eggs
75 grams melted butter
150 grams double cream
50 grams desiccated coconut
250 grams Ritz crackers
2 tablespoons of skimmed milk powder
150 grams soft brown sugar
150 grams demerara sugar
Generous pinch of salt
75 grams demerara sugar
Directions:
Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Apply cooking spray in a 20-cm springform cake tin.
In a food processor, add ½ of the Ritz crackers. Pulse until processed.
Add the sugar, coconut, and melted butter. Pulse again until well blended.
Transfer the mixture into the prepared cake tin and spread it evenly.
Place a saucepan on the stove and turn the heat to medium.
Add the cream, milk powder, sugars, and butter. Stir until well blended and allow the mixture to boil. Make sure to stir from time to time. Season with salt to taste.
Remove the pan from the stove, then allow the mixture to cool.
Add the cracked eggs gradually and beat every addition until well mixed.
Scatter the remaining Ritz crackers on the sides of the cake tin.
Pour the custard on top and spread it evenly.
Put the pie onto a baking sheet.
Place it inside the preheated oven and bake for about 45 minutes or until the top turn golden brown.
Remove from the oven and let the pie cool completely at room temperature.
Serve warm and enjoy!
