This Rice and Beans dish is what I call simple yet perfect! With this very minimal set of ingredients, you will surely enjoy a meal with your family! Ingredients:
¼ c extra virgin olive oil
1 medium onion diced
1 large bell pepper diced
2 garlic cloves minced
1 teaspoon ground cumin
¼ teaspoon red pepper flakes or to taste
14.5 oz. 1 can diced tomatoes
2 c long-grain brown rice
4 c vegetable broth
16 oz. 1 can black beans, rinsed
¼ c cilantro chopped
Directions:
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onion and sauté until translucent.
Add the bell pepper and sauté until soft.
Add the garlic, red pepper flakes, and cumin. Sauté until aromatic.
Add the tomato slices and sauté until soft. This will take about 5 minutes.
Add the vegetable broth and rice. Stir until well mixed and allow the mixture to boil.
Cover the skillet with a lid, then turn the heat down to low and cook the rice for 45 minutes.
Add the cilantro and black beans, then stir until well mixed.
Remove from the heat and allow it to rest for about 5 minutes.
