Ingredients:
1 lb (450g) red kidney beans
¼- ⅓ c vegetable oil (or canola)
1 lb (450 grams) andouille sausage (sliced)
½ lb (225 grams) ham hock or smoked turkey chopped
1 Large onion diced
2 tbsp minced garlic (about 6 medium-size garlic)
½- ¾ c celery diced (about 1 medium rib celery)
1 large bell pepper diced
2 -3 bay leaves
1 tsp thyme
1 sprig of fresh thyme
2 tsp creole spice Homemade recipe here
2 tsp Paprika
1 tsp cayenne pepper (optional)
7-8 c chicken stock or water
Salt and fresh ground pepper to taste
2 green onion diced (for garnish)
3- 4 c cooked white rice
Directions:
Clean the dry beans, then add them into a large pot.
Add enough water to submerge them. Allow the beans to sit overnight.
Drain the beans and rinse with water.
Place a large pot on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Slice the turkey and sausage into small pieces.
Place them into the pot with the hot oil and cook for 5 minutes or until they turn brown.
Add the garlic, celery, onions, bay leaves, bell peppers, and thyme. Saute until aromatic and soft.
Add the creole seasoning, cayenne, and paprika. Stir until well mixed.
Add the beans and stir until well mixed.
Pour in the broth, then stir until well blended.
Allow the mixture to boil, then turn the heat down to low. Simmer for about 2 hours or until the beans are soft and the texture of the sauce becomes thick. Make sure to stir from time to time. Add more broth if needed.
Discard the bay leaves, then add more seasonings if necessary.
Serve hot over rice and enjoy!
Note:
Garnish each serving with green onions.
