I’ve made this delicious Steamed Chicken with Black Bean Sauce again last night, and as expected my family devoured this dish! This recipe is super easy and quick to make with fragrant garlicky steamed chicken with black bean sauce. A summer-friendly dish that you can make any time of the year!

4 chicken drumsticks, remove the bones and cut into small pieces
1 tablespoon light soy sauce
¼ teaspoon white pepper powder
¼ teaspoon sugar
2 spring onions
5 slices of ginger
1 tablespoon Chinese cooking wine
½ tablespoon oyster sauce, optional
4 garlic cloves, finely chopped
1 tablespoon cornstarch
2 tablespoons vegetable cooking oil, heat until smoky
1 tablespoon fermented black beans
wood ear mushrooms as needed
How to make Steamed Chicken with Black Bean Sauce
Step 1: Into small pieces, cut the chicken. Toss the chicken pieces in a mixture of soy sauce, sugar, white pepper, oyster sauce, Chinese cooking oil, spring onion, and ginger slices. Marinate for about 30 minutes.
Step 2: Remove and discard the spring onion sections and a slice of ginger. Into the marinade, add the cornstarch, and mix well until incorporated.
Step 3: In the meantime, finely chop the garlic and roughly cut the fermented black beans. At the bottom, then on top of the chicken, add the mushrooms. Over the chicken, evenly scatter the garlic and fermented black beans.
Step 4: Heat about 2 tbsp of cooking oil. Once smoky, evenly pour the oil over the garlic and stir well.
Step 5: Then, steam for about 15 minutes with high fire.
Step 6: Before serving, garnish with some more extra light soy sauce and sesame oil for that naughty flavor. Enjoy with steamed rice!
