Chicken, veggies, and a delicious sauce! This recipe is one to try! All you need for this recipe is a slow cooker to do all the work for you! 6 hours of cooking time is so worth it once you taste it. Enjoy!
Ingredients:
1 (14.5 ounces) can of petite diced tomatoes with green chilies
3 bell peppers (preferably 1 red, 1 yellow, and 1 green) cored and sliced
2 tablespoons fresh lime juice
4 cloves garlic, minced
1 teaspoon salt
1 large yellow onion, halved and sliced
2 ½ teaspoons chili powder
¾ teaspoon pepper
2 teaspoons ground cumin
2 pounds boneless, skinless chicken breasts
1 tablespoon honey
1 teaspoon paprika
¾ teaspoon ground coriander
For Serving:
Cilantro, sour cream, salsa, guacamole or sliced avocados, shredded Mexican cheese (optional)
12 6-inch flour tortillas
Directions:
Spread ½ of the canned tomatoes to the bottom of the slow cooker.
Place ½ of the onions, garlic, and ½ of the peppers over the tomatoes.
Place the chicken breasts over the veggies.
Add paprika, coriander, cumin, pepper, chili powder, and salt into a mixing bowl. Whisk until well incorporated.
Sprinkle the seasonings over the chicken and toss until coated.
Add the rest of the potatoes over the chicken breasts and spread them evenly. Add the rest of the peppers and onions on top.
Cover and seal the slow cooker, then cook everything for about 3 hours on a high setting or 6 hours on a low setting.
Remove the chicken breasts from the slow cooker, then use two forks to shred them into small pieces.
Blend lime juice and honey, into a mixing bowl. Pour the mixture into the slow cooker and stir until well blended.
Put the shredded chicken back into the slow cooker. Add salt and pepper to taste.
Sprinkle freshly chopped cilantro over each serving to garnish.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days.
