This Oven Roasted Smoked Sausage and Potatoes is an easy and quick sheet pan meal. It is another great addition to your menu rotation. And the combination of ingredients from the smoked sausage, potatoes, and onions is phenomenal!
Ingredients
3-4 tablespoons extra virgin olive oil
1 pound smoked sausage – sliced into round pieces
1 lb. baby yellow and/or red potatoes – washed and cut into ½” cubes
1 large sweet yellow onion – sliced or chopped
1 teaspoon dried thyme
2 teaspoons paprika
2-3 teaspoons fresh lemon juice
2 tablespoons fresh chopped parsley
½ teaspoon kosher salt
¼ teaspoon black pepper
How to make Oven Roasted Smoked Sausage and Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Line with foil or parchment paper a large baking tray with sides and grease with cooking spray. Set aside.
Step 3: Into a large bowl, place the sausage rounds, onions, and potatoes. Drizzle with oil and sprinkle with salt, pepper, paprika, dried thyme, and lemon juice. Mix well using your hands until evenly and completely coated.
Step 4: Onto the prepared baking tray, transfer the mixture and evenly spread. Bake in the preheated oven for about 45 minutes to 1 hour, stirring every 15 minutes, until the potatoes and tender and golden brown.
Step 5: When done, take the dish out of the oven and sprinkle it with some parsley. Enjoy!
Notes:
Keep any leftovers in individual containers and store them in the fridge for up to 3 to 4 days. Serve cold or reheat if desired.
If desired, easily double the recipe. Note that this dish does not freeze well.
Variations:
You can add Brussel Sprouts if desired. Wash and slice each in half and add them with the sausage, onion, and potatoes.
I love adding cherry tomatoes, banana peppers, asparagus, and/or broccoli. Remember to add them in the last 20 minutes of cooking.
You can use lime juice in place of lemon juice. If desired, increase the lemon or lime juice.
Add a touch of sweetness to the dish by adding carrots and sweet potatoes.
Feel free to use other dried herbs in place of thyme such as rosemary. You can also use chopped fresh herbs and add them to the parsley.
