Ingredients:
1 (16.25-oz) package white cake mix (I used Duncan Hines Moist Deluxe)
3 large eggs
1 ¼ c buttermilk
¼ c vegetable oil
1 (3 ½-oz) can flaked coconut
⅔ c chopped pecans, toasted
3 T Rum (optional)
Cream Cheese Frosting:
1 (8-oz) package cream cheese, softened
½ c Butter or margarine, softened
1 (16-oz) package powdered sugar
2 tsp vanilla extract
1 c chopped pecans, toasted
Directions:
Step 1: In a mixing bowl, add the cake mix, eggs, oil, and buttermilk. Beat until well mixed.
Step 2: Add the pecans and coconut. Stir until well mixed.
Step 3: Apply cooking spray and sprinkle with flour three 9-inch round cake pans.
Step 4: Transfer the batter into the prepared pans.
Step 5: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 6: Place them inside the preheated oven and bake for about 15 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 7: Remove from the oven and let the cakes rest at room temperature to cool completely.
To Make the Frosting:
Step 1: Add the butter and cream cheese into a mixing bowl. Beat until well mixed.
Step 2: Add powdered sugar and beat every addition.
