If you are looking for a simple and easy recipe to try today, then you need to give this one a try! These Ham and Cheese Egg Muffins never fail to make me smile all the time! You can eat a lot of these treats if you are on a keto diet! I have listed all the ingredients and directions so you just need to follow them step by step and you are good to go. Enjoy!
Ingredients:
¼ tsp garlic powder
½ c milk (I used skim)
12 large Eggs
¾ c shredded cheddar cheese divided
8 oz. ham steak, cubed
½ tsp salt
2 green onions, sliced thin
¼ tsp black pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to the inside of a muffin tin.
Add milk, spices, and eggs into a large mixing bowl. Whisk everything until well blended.
Add green onions, ham, and ½ cup of shredded cheddar cheese into the same bowl with the egg mixture. Stir until well incorporated.
Pour the batter into each cup of the muffin tin.
Top each muffin cup with the rest of the cheese. (Feel free to add more.)
Place the muffin pan inside the preheated oven and bake for about 25 to 30 minutes or until a toothpick comes out clean after inserting it in the middle of one muffin.
Remove from the oven and let the muffins rest for a few minutes at room temperature.

Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days or 3 months in the freezer. Reheat in the microwave.
You can eat these muffins, cold, but I suggest eating them warm for the best result!
