Ingredients:
4 tbsp olive oil, divided
3 tbsp balsamic vinegar
1 tsp paprika
5 cloves garlic, smashed
½ tsp onion powder
⅓ c chicken broth
½ tbsp Italian seasoning
3 lbs. pork loin
1 tsp salt
¼ tsp fresh ground pepper
Directions:
Use paper towels to pat dry the pork.
In a mixing bowl, add black pepper, salt, onion powder, and paprika. Whisk until well blended.
Sprinkle the seasonings over the pork, then rub until well coated.
Place a large skillet on the stove and turn the heat to medium.
Add 1 tbsp of olive oil and allow it to become hot.
Add the pork, then sear each side for a few minutes until it turns golden brown.
Add garlic, olive oil, and balsamic vinegar into a food processor. Pulse until well blended.
Add Italian seasoning and stir until well blended.
Pour chicken broth into the slow cooker.
Add the pork with the fatty side facing up into the slow cooker.
Brush the pork with the balsamic mixture.
Cover and seal the slow cooker, then cook the pork for about 3 hours on a high setting or 4 to 5 hours on a low setting.
Move the pork onto a clean chopping board, then cover it with aluminium foil. Let it sit at room temperature for at least 15 minutes.
Slice the pork into even pieces.
