My mom makes the best Picadillo! I tried recreating her recipe. Then, I found this recipe for Mexican Picadillo a few years ago, and this has become a favorite at home. This Mexican Picadillo is super easy to make with bold and authentic flavors that everyone is fussing about! This dish is also a great option for a quick and easy dinner. Serve this scrumptious Mexican Picadillo with rice or tortillas for a completely filling weeknight dinner that your loved ones will enjoy!
INGREDIENTS
1 small onion, diced
1 pound ground beef
2 large carrots, peeled and diced
2 large potatoes, peeled and diced
4 cloves garlic
1 ½ c. beef broth
1 (8-ounce) can of tomato sauce
1 tsp cumin
1 bay leaf
½ tsp oregano
½ c. frozen peas
Rice or tortillas for serving
Kosher salt and freshly ground black pepper, to taste
How to make Mexican Picadillo
Step 1: Add the ground beef to a hot large skillet over medium heat. To taste, season with salt and pepper. Cook the ground beef until barely pink. As needed, drain the grease.
Step 2: To the skillet with the ground beef, add the onion, potatoes, and carrots. Cook further until the veggies are tender and the meat is completely cooked. Next, add the garlic and continue to cook for another 30 seconds.
Step 3: Add the tomato sauce along with the beef broth. Stir well, then add the cumin, oregano, and bay leaf. Bring everything to a simmer. Put the lid on and continue to cook for additional 10 minutes.
Step 4: Take the lid off and add the peas. Stir well and cook further until the potatoes are tender and most of the liquid has been cooked down, uncovered.
Step 5: Remove from the heat when done, and serve the Mexican Picadillo right away with rice or tortillas. Enjoy!
