These baked zucchini are an easy and delicious veggie side dish that is great to pair with just about anything. The light sprinkle of Parmesan adds an extra layer of flavor to these zucchinis. As for the texture, the breadcrumbs surely did their magic! To achieve golden, crunchy Parmesan bits and to brown the zucchini, roast the zucchini at a high temperature. Ingredients
2 tablespoons olive oil
2 tablespoons breadcrumbs
600 grams/1.2-pound zucchinis (4 large, 5 medium)
2 tablespoons Parmesan, grated (a great option is a store-bought sandy type)
½ teaspoon each salt and pepper
How to make Quick and Easy Baked Zucchini
Step 1: Prepare the oven. Preheat it to 240 degrees C or 450 degrees F (220 degrees C fan). Make sure to set the oven shelf on top.
Step 2: In the meantime, trim the ends off of the zucchini. In quarters lengthwise, cut the medium zucchinis. Into sixths (to make 6 long “wedges”, half each zucchini and cut each into 3 lengthwise), cut the large zucchinis.
Step 3: On a tray, place the zucchini and drizzle with 1 tbsp oil, and season with salt and pepper. Toss the zucchini until completely coated.
Step 4: In two rows, line the zucchini, skin-side-down, making sure each piece is not touching the other. Evenly sprinkle the zucchini with breadcrumbs and Parmesan. Then, drizzle them with 1 tbsp oil.
Step 5: Place in the preheated oven and bake for about 12 minutes or until the Parmesan is golden and the zucchini is tender, but not soggy.
Step 6: Remove from the oven when done and serve the Baked Zucchini right away. Enjoy!
