Ingredients:
½ c mozzarella or Italian blend cheese
1 c marinara sauce
½ bell pepper chopped
¼ c Parmesan cheese optional
3 c cooked pasta 1.5 cups dry pasta
½ medium yellow onion chopped
2 chicken breasts cut into strips
½ tsp each salt, pepper, & garlic powder
3 cloves of garlic minced
1 tbsp olive oil
Directions:
Place a saucepan on the stove, then pour in 2 cups of water. Add a bit of salt.
Turn the heat to high and allow the water to boil.
Add 1 ½ cup of pasta, then cook for a few minutes until firm to bite.
Drain the pasta and rinse with cold water.
Slice the chicken breasts into small pieces.
Slice the bell peppers and onion as well.
Place a heavy-duty pan on the stove and turn the heat to medium-high.
Add 1 tbsp of oil and allow it to become hot.
Add the bell pepper and onion, then sauté until soft.
Add the garlic and sauté until aromatic.
Add the chicken slices and cook for a few more minutes until they turn brown. Season with salt, garlic powder, and pepper to taste.
Add the marinara sauce and stir until well blended.
Simmer everything for about 5 minutes.
Add the drained pasta into the pan, then toss until well coated by the delicious sauce.
Add the cheese and remove it from the heat. Stir until well blended.
Place it inside the oven and broil for a few minutes until the cheese turns brown.
Remove from the oven, then sprinkle more Parmesan cheese on top to garnish. Feel free to be very generous.
Allow it to rest for a few minutes at room temperature.
