Air fried to perfection! This Parmesan Crusted Chicken is one to try! Turn this into a keto-friendly dish by removing the breadcrumbs and adding more Parmesan cheese! Bon Appetit!
Ingredients:
1 tablespoon garlic powder
1 c Parmesan, shredded
2 large chicken breasts
1 c panko bread crumbs
1 c real mayonnaise
Directions:
Slice each chicken breast into two.
Cover each chicken slice with plastic wrap, then gently pound each with a meat mallet. Remove the wrapper.
Prepare the Air Fryer and preheat to 390 degrees F or 198 degrees C.
Sprinkle salt over the chicken slices, then toss until well coated.
Add mayonnaise on both sides of each chicken slice and spread it evenly until well coated.
In a mixing bowl, add Parmesan cheese, garlic powder, and Panko breadcrumbs. Whisk until well incorporated.
Add each chicken slice into the bowl with the cheese mixture, then toss until well coated.
Add the chicken pieces into the preheated Air Fryer and arrange them in a single layer, making sure to leave a small space in between.
Cover and seal the Air Fryer, then cook the chicken for about 10 minutes or until done.
Turn the chicken over, then cook for another 5 minutes or until done.

Notes:
Skip the breadcrumbs and add more Parmesan cheese if you are on a keto diet.
Thaw and reheat in the microwave or oven for a few minutes.
It is important to leave small space between each chicken for a crispier texture.
