Ingredients:
3-4 fresh basil leaves, sliced
Pepper to taste
3 tablespoons sun-dried tomato pesto I used Scala brand or Delallo in the US
1 clove garlic, minced
125ml/1/2 c light/single cream 20% fat content for US readers
Salt to taste
Parmesan cheese to serve
125ml/1/2 c reserved pasta water
Directions:
Place a large pot with water on the stove, then turn the heat to high. Allow the water to boil.
Add the ravioli and a bit of salt, then cook for a few minutes, according to the directions provided on the package.
Drain the pasta and set aside ½ cup of its water for later use.
Place a pan on the stove and turn the heat to low.
Add garlic and sun-dried tomato pesto, then stir and cook for 2 minutes or until aromatic.
Add the cream and basil, then stir until well blended. Let the mixture simmer for one minute.
Add the cooked ravioli into the pan with the sauce, then toss until well coated. Add salt and pepper to season. If the texture gets too dry, add some of the reserved pasta water.
Top each serving with grated Parmesan cheese.

Notes:
Feel free to use plain tomato paste for this recipe.
You can also use dried basil if you prefer.
You can also use Greek yoghurt, heavy cream, or creme fraiche if you prefer.
