Ingredients:
FOR THE BEEF:
1 pound ground beef
1 teaspoon chilli powder
½ teaspoon ground cumin
½ teaspoon smoked paprika
kosher salt
Freshly ground black pepper
FOR CILANTRO-LIME RICE:
2 cups cooked white rice
1 tablespoon lime juice
2 tablespoons finely chopped cilantro
TO ASSEMBLE QUESARITO:
8 large flour tortillas
1 ½ cups shredded Cheddar
1 c. Nacho Cheese Sauce
½ cup sour cream
Directions:
Step 1: Place a medium skillet on the stove and turn the heat to medium-high.
Step 2: Add the beef, cumin, paprika, chilli powder, salt, and pepper. Cook for about 6 minutes or until the beef is brown. Discard any excess grease.
Step 3: In a medium mixing bowl, add the white rice, cilantro, and lime juice. Stir until well combined.
Step 4: Place a large non-stick pan on the stove and turn the heat to medium-high.
Step 5: Add 1 tortilla and top it with cheddar cheese, then place the other tortilla over the cheese. Cook each side for about 2 minutes until the cheese has melted completely.
Step 6: Repeat step 5 to the rest of the tortillas and cheese.
Step 7: Add rice, nacho cheese sauce, meat, sour cream in the middle of a quesadilla, then roll it up to make a burrito. Repeat this process to the rest of the ingredients.
Step 8: Cook two quesaritos at a time in the pan for about 3 minutes on each side or until crispy.
Step 9: Place them on a clean serving plate. Step 10: Serve hot and enjoy!
